I finally got Nextcloud on docker configured. I used the AIO version, and it was easy to configure using Portainer. I found the NEXTCLOUD_DATADIR environment variable and was able to setup Nextcloud to use a CIFS mounted share on the Portainer VM to map to a Truenas datastore. I really like being able to use Nextcloud and also have the important pictures and data be safe and accessible through Truenas. No janky storing the files within the docker container itself, just simple file and object storage that I can manually interact with.
